The Top 10 Most Epic Pancakes

It’s only flipping National Pancake Day. The batter-eating day of  champions is upon us, but forget Jiffy lemon and caster sugar. It’s time to get creative and mix sweet, savory and everything in-between.

To celebrate Shrove Tuesday I’ve hunted down the most creative pancakes – so you’ll never have an excuse to eat a boring looking pancake ever again.

The Top 10 Most Epic Pancakes

1. Maple Syrup, Crispy Bacon and Coffee Infused Cream
The smell of bacon doesn’t need to just be a breakfast thing. Crispy bacon covered in maple syrup is undeniably the King of pancakes. These American style fluffy pancakes, drizzled in gooey goodness need nothing more than a dollop of coffee-flavoured cream and a large appetite.

2. Caramelized Banana, Mars Bar and Rum & Raison Ice Cream
For an irresistible pancake laden with treats kids dreams are made of look no further. If pancakes were measured in sunshine this would be a glorious day in Barbados. Perfectly accompanied with boozy ice cream. Your waistline won’t thank you but who needs gratitude when you’re already grinning from ear-to-ear.

I made this last year. It was seriously amazing… Mars Bars are the BEST melted in pancakes.

3. Hog Roast, Spring Onion and Smoked Paprika sauce
Looking for something less fluffy and more meaty? Sling the traditional flour bap and go for a hog roast in a pancake. The fusion of fruity spring onion and smoked paprika works a dream. Pancake sweats are most definitely around the corner.

4. Pig In Pancake – Sausage and Red Onion Chutney
This is the daddy of savory pancakes and the perfect twist on everyone’s Sunday roast favourites – Pigs In Blankets. Hearty and delicious, it’s like a Christmas party in March. Believe me, one is never enough.

This is one of my own too. I flipping love a sausage. So on pancake day it was rude to not indulge

5. Coconut Cauliflower Pancakes with Pomegranate Cream
A sexy looking stack of pancakes using coconut flour and pureed cauliflower. Guaranteed to get your taste buds dancing. Tantalisingly topped off with pomegranate juice mixed with cottage cheese and shredded coconut. Dress to impress when eating these bad boys. 

6. Caramelized Apple, Cinnamon and Walnuts
It’s National Pancake Day so go big or go hungry. These stodgy, gooey, pancakes are every desert-lovers dream. They also contain fruit, so could be counted as part of your one-a-day, right? Either way, build up a napkin barrier, as you won’t want to share.

7. Rocket, Pepperoni, Cherry Tomatoes and Goat’s Cheese
Sounds like a pizza, may even look like a pizza, but if it’s wrapped in a pancake, it’s allowed on National Pancake Day. Forget supper this savoury pancake has all the substance you’ll need to see you through to sunrise. All the cool kidz are going savoury this year.

8. Carrot Cake Pancake with Nutmeg, Raisins and Walnuts
Anyone with a weakness for carrot cake will fall head over heels for this stylish looking pancake stack. These scrumptious batter delights are covered in a cream cheese glaze and full of raisins and walnuts. What’s not to like?

9. Peanut Butter, Pumpkin, Banana and Hot Fudge Sauce
Prepare yourselves for a mouth-gasm. This is about as decadent as pancakes get. Sprinkled with peanut butter, filled with pumpkin puree and coated in hot fudge lava. You’ll need to wash your taste buds out with soap and water afterwards, you’ll feel that debauched.


10. Orange, Chocolate Chips and Grand Marnier Whipped Cream
Who said pancakes can’t be boozy? This lavish batter role has all the ingredients to kick-start a raucous partay in your belly. Grand Marnier infused cream is the perfect accompaniment to orange and chocolate. Terry’s Chocolate Orange – sling your hook.

This is another of my recipes. I’m a huge fan of Terry’s Chocolate Orange so adding booze infused cream is bound to be a winner.

Tomorrow is Ash Wednesday, the first day of lent. So cram your pancakes full of naughty, rich, fatty foods as we’ve got 40 days and 40 nights without anything glutenous. Chocolate, biscuits and cakes are soon to become the enemy.
